Ingredients
1 (12-oz.) block aged sharp White Cheddar cheese
1/3 c. + 2 T. mayonnaise
1 (4-oz.) jar diced pimiento, drained & rinsed
1/3 c. thinly sliced fresh chives
1 T. Dijon mustard
1/2 tsp. Worcestershire sauce
1/4 tsp. ground red pepper
1/4 tsp. ground black pepper
Crackers to serve (opt.)
Directions
Grate half of cheese using large holes of a box grater; grate remaining half of cheese using small holes of box grater. Stir together mayonnaise, pimiento, chives, mustard, Worcestershire sauce, red pepper and black pepper. Stir in Cheddar cheese until well blended. Let stand for 15 minutes. Serve immediately or cover and chill for up to 3 days.
Makes 2 cups.
