Texas Mac And Cheese

3rd Place — Cooking with Cheese
Ingredients
2 c. spiral pasta
Pinch of Salt
2 ½ c. cubed sharp cheddar
2 T. all-purpose flour
1 ½ tsp. salt
1 ½ tsp. dry mustard
1/2 tsp. black pepper
¼ tsp. cayenne pepper
¼ tsp. smoked paprika
¼ tsp. ground nutmeg
2/3 c. sour cream
2 eggs, beaten
¼ c. grated onion
1 ½ c. half-and-half
1 ½ c. heavy cream
1 tsp. Worcestershire sauce
2 ½ c. grated Queso cheese
Directions
Boil pasta and water with a pinch of salt. When al dente, remove from heat and drain. Place pasta into a 9 x 13 x 2-inch pan; mix with cube sharp cheddar. Preheat oven to 350°. Combine flour, salt, mustard, pepper, cayenne, paprika and nutmeg together in a large mixing bowl; mix together well. Add sour cream and beaten eggs. Mix all ingredients with the wire whisk until everything is evenly incorporated. Add grated onion, half-and-half, Worcestershire sauce and whipping cream. Fully blend all ingredients together. Pour mixture over pasta and cheese; stir all ingredients together. Top with grated queso cheese and place in oven. Bake 30 minutes then broil two minutes, watching closely to prevent burning, until queso cheese is golden brown. Let cool 10 minutes. Serve and enjoy.
