Fresh Cranberry Salad

“A sweet starter featuring one of fall’s favorite fruits”
1-lb. pkg. cranberries
2 oranges, peeled
1 Red Delicious apple, peeled and quartered
1/2 c. pecans, chopped
1 c. sugar
1 c. boiling water
1 (3-oz.) pkg. cherry gelatin
Wash and pick through cranberries. Put cranberries, 2 whole oranges, apple peeled and quartered, and pecans in food processor. Pulse food processor 6-8 times until mixture is coarsely chopped. Add sugar and pulse 2-3 times just to blend. In medium bowl, mix together water and gelatin. Stir until gelatin is dissolved. Stir in cranberry mixture until well blended. Cover and refrigerate overnight.
