Crispy Orange Yams

3rd Place – Fall Family Favorites, 2012
2 navel oranges, sliced about 1/2 inch thick
3 lg. yams, washed & sliced crossways 1-1 1/2 inches thick
1 c. brown sugar
Zest of 1 orange
1 c. finely chopped pecans
1/4 c. butter, cut in sm. pieces
1/8 tsp. ground cinnamon
Place orange slices on sprayed cookie sheet. Top each with slice of yam. Process sugar, zest, nuts, butter and cinnamon on pulse until like sand. Top each yam with mixture. Bake for 35-40 minutes at 350º.
