Canned Okra
Savor summer’s fresh okra for months to come by pickling the veggies with these easy steps. Though you have to plan ahead, processing the okra is worth the effort — the heat cooks the okra just a bit and helps them absorb the brine.
Directions
Wash okra. Cover okra in cold water and boil 2 minutes. Pack okra in hot jars leaving ½ in. headspace. Boil water in saucepan. Ladle boiling water over okra. Remove bubbles. Adjust 2-piece caps. Boild 10 minutes in a water bath. Makes 1½ to 2 lbs per quart.
