A refreshing berry treat that is sure to please your guest at any occasion.
Ingredients
- ¾ teaspoons unflavored gelatin (1 envelope)
- ¼ cup water + 2 tablespoon cold water
- ¼ cup granulated sugar
- 2 cups raspberries, divided
- 2/3 cup heavy cream, divided
- 2/3 teaspoons confectioners’ sugar
- ½ cups raspberry jelly
Directions
In small bowl, sprinkle the gelatin over the 2 tablespoons cold water; stir and let soften until opaque, about 3 minutes. In a small saucepan over medium heat, combine ¼ cup water and granulated sugar; heat until sugar dissolves. Stir in softened gelatin. Using a fine mesh sieve, strain mixture into a bowl; let cool to room temperature. In food processor or blender, puree 1 cup raspberries. Stir puree into gelatin mixture. Whip 1/3 cup cream with confectioner’s sugar to medium stiff peaks. Using rubber spatula, stir ¼ of the cream into raspberry puree; carefully fold in remaining cream. Refrigerate for at least 4 hours or up to overnight. Put ion readymade (purchased) phyllo cups. Put raspberry mixture in each cup. Top with fresh raspberry and glaze with melted raspberry jelly.
