Very Merry Berry Cherry Holiday Relish

1st Place — Canning
Ingredients:
1 c. dried whole cherries, re-hydrated in 1 c. hot cranberry juice
1 c. dried berries blend (blueberries, raspberries, cranberries, cherries), re-hydrated in I c. strawberry nectar.
1 cinnamon stick
½ tsp. whole cloves
3 c. fresh or frozen cranberries
¼ c. lime juice
1 c. granulated sugar
1 pinch canning salt
½ c. dried cherries, roughly chopped
1 c. peeled, cored & rough chopped pears
2 T. orange liqueur, Cointreau
Directions:
In separate heat resistant small bowls, begin two re-hydrating processes for whole dried cherries and dried blended berries. Add cinnamon stick to whole cherries and cloves to blended berries. Allow to rehydrate approximately 1 hour. Combine 3 cups raw or frozen cranberries, lime juice, granulated sugar and pinch of salt in a large saucepan. Pour in any remaining liquids from all re-hydrated berries, with whole spices strained out. Bring to a boil over medium heat, stirring constantly. Cook until cranberries pop and sugar is dissolved. Then lower heat and simmer a few minutes until liquids have reduced and mixture has a slightly syrupy glaze. Fold in roughly chopped dried cherries, chopped pears, as well as re-hydrated whole cherries and re-hydrated blended berries. Bring to one final boil approximately a minute. Remove from heat and stir in orange liqueur. Ladle into prepared jars. Cover with rings and lids and process in a hot water bath 15 minutes (half pints).
