“Sugar, spice & everything nice”


4 c. cooked, mashed sweet potatoes
1/3 c. orange juice
1/4 c. brown sugar
3 T. butter, melted
1 tsp. grated orange peel
1/2 tsp. salt
1/2 tsp. cinnamon
1 T. crystallized ginger
1/4 tsp. allspice
1/8 tsp. pepper


1 c. pecans, toasted and chopped
1/2 c. packed brown sugar
1/4 c. gingersnap crumbs
Pinch of salt
2 tsp. honey
1 tsp. vanilla extract
4 T. unsalted butter, melted


In a bowl, combine all casserole ingredients and mix well with an electric beater. Pour into a well-greased 2-quart shallow casserole dish. Topping: In another bowl, thoroughly combine all topping ingredients. Evenly sprinkle topping over casserole. Bake at 350º for 20 minutes.

Yield: 4 to 6 servings.
