This simple recipe for salsa is inspired by the Big Tex Urban Farms initiative currently overseen by the State Fair of Texas. By utilizing farm-grown tomatoes, it adds a fresh taste to this classic recipe. We hope you enjoy!

2nd Place – Tex-Mex Food
Ingredients
3 T. Salt
4 T. Olive Oil
4 T. Apple Cider Vinegar
12 C. Whole Peeled Tomatoes
1 med. Onion
3 cloves garlic
1 bunch cilantro
2-3 each: jalapeno & Serrano
1-2 Habanero peppers
2 med. Cucumbers, peeled
6 c. watermelon
Juice of 1 or 2 limes
Directions
Use food processor in batches on all ingredients and mix together. Serve with chips and enjoy!
