[dropcap]T[/dropcap]exas takes its dips and chips very seriously, and this recipe is one that will please everyone. Pimento cheese is a common food preparation in the Southern United States, a spread or relish made with cheese. It is affectionately known as “The caviar of the South.” The basic recipe has few ingredients: sharp cheddar cheese or processed cheese (such as Velveeta or American cheese), mayonnaise, pimentos, salt and pepper, blended to either a smooth or chunky paste. Enjoy with a glass of sweet tea and you are set!
Pimento Cheese Spread

Ingredients:
- 12 oz. extra sharp white cheddar, grated
- ¼ c. grated extra-sharp yellow cheddar
- 1 (7 oz) jar pimentos, drained & finely chopped
- ½ tsp. black pepper
- ½ tsp. cayenne pepper
- ¾ c. mayonnaise
- 1 tsp. onion powder
Directions:
Combine all ingredients in a medium bowl and mix well. Refrigerate 2 hours. Serve with premium crackers or in celery.
