Fall Harvest Spice Cake

Fall in love with this tasty spice cake! It is the perfect holiday dessert with all your favorite spices!



  • 1 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 tsp. nutmeg
  • 1/4 tsp. ground ginger
  • 1 cup oil
  • 1/2 tsp. vanilla extract
  • 4 eggs
  • 2 cups all-purpose flour
  • 1 (15-oz.) can pumpkin
  • 1 apple, cored, peeled & chopped
  • 1/2 cup chopped pecans


  • 2 tsp. vanilla extract
  • 1/2 cup butter, softened
  • 8-oz. pkg. cream cheese, softened
  • 3 1/2 cup powdered sugar



Mix sugar, cinnamon, soda, salt, nutmeg, ginger, oil, vanilla and egg together; add flour, 1/2 cup at a time. Blend in pumpkin; fold in apple and pecans. Pour into greased and floured Bundt pan; bake at 350° for 70 minutes. Cool 20 minutes in the pan; remove and complete cooling on a wire rack. Frost when cool.


Blend vanilla, butter and cream cheese together; add enough powdered sugar until desired spreading consistency is reached.
