Maple Bacon Blondies

1st Place — Bacon and Egg



½ c. maple syrup

1 lg. egg

5 slices bacon

2 tsp. vanilla

8 T. butter, melted

1 c. flour

¾ c. light brown sugar

½ tsp. salt

¼ c. sugar



Preheat oven to 375 degrees. Butter an 8 x 8-inch baking dish; set aside. Place a cooling rack above a foil-lined rimmed baking pan. Place maple syrup in a shallow bowl. One slice at a time, dip bacon into syrup, gently rubbing it into the syrup. Repeat on other side. Transfer to cooling rack and repeat with remaining slices. Bake 15 to 20 minutes or until bacon is crispy. Remove baking pan from oven and cool bacon until it can be handled. Coarsely chop bacon into small pieces; set aside. Using an electric mixer, beat butter and sugars together until fluffy. Add egg and vanilla. Beat until well combined. Add flour and salt, beat until well blended. Stir in bacon pieces. Spread into prepared dish. Bake 20-25 minutes, until top is golden and a toothpick inserted in center comes out clean. Cool on wire rack. Makes 9-12 brownies.
