Texas Pecan Pie

1st Place—Pies

 

Ingredients:

Crust:

  • 1 ¼ c. flour
  • 6 T. sugar
  • 2 T. cold shortening
  • 2 T. Ice water

Pie:

  • ¼ c. butter, softened
  • ½ c. packed brown sugar
  • ½ c. sugar
  • 1 c. corn syrup
  • 4 eggs, slightly beaten
  • 1 tsp. vanilla
  • 1 c. pecan pieces

Directions:

Crust:

Blend or cut flour, sugar, shortening and ice water into pea-size pieces. Turn out and knead together, then flatten to disc and refrigerate for 45 minutes. Roll out and place in pie pan.

Pie:

Stir softened butter with sugars; add corn syrup and stir. Add eggs and stir again. Add vanilla and pecan pieces; stir and pour into crust. Cook for 10 minutes at 425 degrees, then turn oven to 350 degrees and cook fro 40 minutes. Cool and enjoy!
