Savory Smoked Vegetable Salsa

1st Place—Tex Mex

 

Ingredients:

  • 3 lg. red tomatoes, off the vine
  • 5 lg. ripe tomatillos
  • ½ med. Texas 1015 onion
  • 2 Serrano chiles
  • 1 poblano pepper
  • 2 garlic cloves, minced
  • ½ c. fresh cilantro
  • 1 T. fresh lime juice
  • 2 T. tequila
  • 1 tsp. ground cumin
  • ½ tsp. dried Mexican oregano
  • Salt to taste

Directions:

Place red tomatoes, tomatillos, onion, Serranos, New Mexico chiles, poblano and garlic cloves on a prepared smoker; smoke at 225 degrees for 30 to 40 minutes. Place smoked vegetables in food processor with cilantro, lime juice, tequila, cumin, oregano and salt. Process and adjust for taste.
