Lone Star Cookies

1st Place—Youth Cooking, Children

 

Ingredients:

Cookies:

  • 2 ½ c. all purpose flour
  • 1 tsp. baking soda
  • ½ tsp. baking powder
  • 1 c. shortening
  • 1 ½ c. granulated sugar
  • 1 egg
  • 1 tsp. vanilla

Icing:

  • 1 c. powdered sugar
  • 2 tsp. milk
  • 2 tsp. light corn syrup
  • ½ tsp. vanilla extract
  • Blue & red food coloring

Directions:

Cookies:

Preheat oven to 375 degrees. In small bowl, stir together flour, baking soda and baking powder; set aside. In large bowl, cream together shortening and sugar until smooth. Beat in egg and vanilla. Gradually blend in dry ingredients. Chill 30 minutes. Roll out onto parchment and cut with cookie cutters to desired shapes. Place on ungreased cookie sheets. Bake 7-9 minutes or until golden. Let stand on cookie sheet 2 minutes before removing to wire racks.

Icing:

In small bowl, mix all ingredients for icing. Decorate cookies as desired.
